A little light reading…
Sushi roots go as far back as the 7th century, when pickling came to south-east Asia and Japan. The Japanese, by way of preservation, would pack raw fish in rice. As the fish fermented, the rice would start to produce lactic acid which, in turn, would pickle the fish. This process took time, anywhere from two months to a year. The resulting dish was called Nare Sushi (pronounced na-ray-zu-shi).
Japan’s 17th century produced a chef named Matsumoto Yoshiichi of Edo (Tokyo) who took the technique to whole different level by adding vinegar to the rice, greatly reducing preparation time. But the fermentation process continued until the 19th century.
It was during the 1920’s that Hanaya Yohei of Edo gave birth to the popular sushi we know today. Yohei san placed raw fish on vinegar rice and thus was born Edomae Sushi (meaning “facing Tokyo”.
Sushi has come a long way and become an art. It is very labor-intensive and may require your patience as it takes a long time to prepare, but is well worth the wait.
Hashi - Chopstick etiquette
~ When picking food from a communal dish, the reverse end of the chopsticks should be used
~Chopsticks should not be used as a pointer or as an emphasis tool for gesturing
~ Never tap chopsticks or use as drumsticks
~ Never pass food to others with chopsticks unless serving chopsticks have been supplied
~ Chopsticks should never be left standing in food…this is how rice is presented to the dead at funerals…instead, lay your chopsticks at the side of your plate
